Trius Showcase Blanc de Blancs Brut VQA

A rare 100% Chardonnay sparkling wine harvested from two sub-appellations in the Niagara Peninsula; 74% Lincoln Lakeshore (Oliveira Vineyard) and 26% Beamsville Bench (Thirty Bench Vineyard). The base wine is a blend of three vintages, with each spending time in neutral French oak barrels. This méthode traditionnelle sparkling wine spent 48 months aging ‘sur lie’ in our underground sparkling wine cellar. Delicate tiny bubbles rise through a straw yellow coloured backdrop. After 48 months aging ‘sur lie’, the bouquet shows interesting notes of baked apple, yeast, ripe pear, buttered biscuit and almond. This extra-dry, elegant sparkling wine has refreshing acidity and a creamy expanding mousse, along with delicate flavours of bright citrus and apple. Citrus, white currant, brioche, toasted almonds and yeast notes linger through on the refreshing finish.
